I discovered this salad recipe from a co-worker, so it isn’t exactly our own, but we have adapted it and made it into our own special concoction of deliciousness.

Ingredients: (4 Servings)

  • 2 LARGE handfuls of spinach (you can add romaine or arugula lettuce to spruce up the salad a little)
  • Diced Tomatoes (to your liking)
  • 1/2 Cup Chopped up Cashews (or Walnuts)
  • Fresh bacon bits
  • Mozzarella Cheese
  • Red Wine Vinegar Dressing (Recipe Below)

While the portions in the salad itself can be altered to your taste, you’ll want to keep this dressing just as it is. Trust me.

Red Wine Vinegarette

  • 3/4 C Red Wine Vinegar
  • 3/4 C Granulated Sugar
  • 1/4 C Red (or Yellow) Onion
  • 1 1/2 tsp Salt
  • 1 Tbs Poppy Seeds
  • 3/4 tsp Dry Mustard
  • 3/4 C Oil (We use Extra Virgin Olive Oil)
