Tin Foil Dinners: Oven Style

Lately we have been on a cooking kick at our house. Everything from Chicken Enchiladas to  way too salty Chicken Cordon Bleu casserole has been on our menu and we are loving it. Maybe we aren’t actually more sophisticated and grown-up, but it sure makes us feel like it.   Here are a few of the dishes I have made, and fallen in love with. The chicken dishes are my own variation of  “Pinterest Wins” and the sausage is my own creation. However, you can be sure that they are all delicious and healthier than eating out multiple times a week. Oven Tin Foil Dinners This is, of course, something that is great for camping and other outdoor adventures and is delicious over a fire. However, I have found it to be just as delicious at home, in the oven when you’re craving veggies with a little protein or maybe something a little out of the ordinary.

Ingredients:

1/2 roll Summer Sausage
  1/2 C Fresh Green beans
  1/2 teaspoon pepper
  1 C Your choice of bell peppers
  1/4 cup chopped red onions
  Sprinkle lightly with extra virgin olive oil
  2 Large Potatoes
  1 T Bacon Bits
  1/2 T Lemon Juice
  Salt, Pepper and Rosemary to Taste

When the mix is complete, wrap it in tin foil and bake it in the oven (on top of a cookie tray) for 10-15 minutes, until the potatoes are soft. Any other seasonings to taste. You can make this with rice and soy sauce. It is absolutely delicious and probably one of my favorite  healthier options.
