Breakfast Casserole
Alright, if you're following along, you know that I am working on becoming a vegetarian to help heal my kidneys.  However, no matter how much I believed I'd be totally converted by 6 months..  I'm not quite there yet. This recipe is not vegetarian, but I believe it is a healthy way to start my day. 
- 4-5 Eggs
- 1/3 bag potatoes O'Brien
- 1/4 white onion
- 1 C cubed ham
- 1/4 plant based sausage
- 2 pieces shredded pre-cooked bacon
-1 t jamaican jerk seasoning
-1/2 c shredded cheese

Bake in 350 degree oven for 40-45 minutes depending on pan/casserole size.
