So, I semi-created a recipe today, and it was completely delicious, except it was waaay too spicy. I will have to watch the amount of Jalapenos I add going forward. I used some jalapeno ranch and bar-b-que sauce and mixed it to create the base on the Flatbread. I then cut up jalapenos, opened a can of corn, grilled up some chicken (yes I know it’s not vegetarian), cut up an orange sweet pepper, added some mozzarella cheese. You can make it vegetarian by choosing black beans and avocados as suggested, or add you can go the other direction and add some additional meat and include crispy bacon, as the original recipe suggested. I also threw on some red onion. It was delicious and ooh soo spicy.
- 1/8 Red onion, diced
- 1 Jalapeno diced
- 1/2 can of corn
- 1/2 diced sweet pepper
- 1/2 Tomato, diced
- 1 T Ranch * I used Jalapeno Ranch – you can go milder.
- 1 T Mesquite Bar-b-que Sauce -mixed with the ranch
- 1 L T mozzarella on each flatbread
Pop in the oven for 15 minutes and let the flatbreads cook til the cheese is melted and the bottom is slightly browned. It’s absolutely delicious.
