It’s been a while since I posted a recipe that I really enjoyed, and of course, this is not my recipe, though I did make it my way 🙂
I needed something that was quick, because I have been going to the gym every day after work for at least an hour. This is usually around 3 or 4, so cooking a meal after I get home from the gym in order to meet the early dinner time deadline in our house sometimes requires a quick fix.
This week I had two quick fixes that were both meatless and both worked out pretty well, although one was a Meatless Wednesday, you’ll have to forgive me.
Wednesday’s meatless dinner was black bean sloppy joe. I believe it can be made with lentils as well, but we have eaten it a few times and enjoy the recipe with black beans. Our family isn’t big lentil eaters.
We do prefer this recipe on the stove top as it is easier to eat as a sandwich. This time, due to a very busy work schedule I had to crockpot it, which leaves it very saucy and almost soup-like. This works fine if you have a baked potato nearby. 🙂 Either way, give this a try, and I won’t recommend a particular recipe, because each of us have such unique tastes. So, find one that speaks to you!
Secondly, today, for real Meatless Monday I made a grilled vegetable wraps. To the naked eye they looked a little like a crunch wrap from Taco Bell. I am not going to say they were better, because I’ve never actually had a crunch wrap from above mentioned restaurant, but don’t veggies usually beat out grease?
Also, another bummer about this. I didn’t get a picture of either meal, which my dad would say, makes me a totally normal person. But, these wraps started with a little sauce of your choice. Dad and I had Jalapeno Honey Hummus, and mom went with Mayo. I diced and half-baked some potatoes, diced zuchinni, yellow squash, red onion, avocado and tomato and then wrapped the concoction and put it on the little George Forman grill.
They are finished in about 5 minutes and I thought they were really good, especially after a good workout, when you don’t really want to eat greasy, heavy food.
