What I’m Cookin’ Up

It’s so nice to be free to use a car and walk again. I am particularly enjoying some time at home alone to cook up some food for my upcoming week watching my buddy Oliver in Vincennes. Today in particular I made a full pan of chicken and veggie enchiladas, with green sauce, of course. I did a crockpot of funeral potatoes that I find to be an easy, ,quick breakfast.

I also took some time, while the oven was on to bake up some Pumpkin Chocolate Chip bread. I do have a hard time being at home alone a lot sometimes. However, right now, after having had to be with someone pretty much 24/7 for 3 months while I was healing I am especially enjoying the time on my own.

There was nothing spectacular about any of these dishes, it was more about just having the time and capabiliity to do this as it has been so frustrating to have to do everything with a boot, or essentially at half capacity for so long.
